Blue Apron: Seared Pork Chops & Plum Salsa

I was excited to try cooking a new dinner recipe, something protein-based with some gourmet flair. Blue Apron included several ingredients I never used before (farro and scallions) and a few intimidating others- kale usually results in something inedible (my attempts, anyway), mixing fruit into dinner is a roll of the dice (usually ending up with my husband not-so-subtly grimacing when he sees it on his plate near "real food") and I'm allergic to almonds. I was not entirely confident I could make it work. 


On to the meal!


A friend also wanted to try this one out, making the serving size for 3. This took additional prep since the farro, vegetable, and plum salsa had to be cooked separately from the meat, due to her dietary preferences as a vegetarian. I put a helping of farro and plum salsa to the side for me, and finally mixed in the almond slices last. Since the almond oils were then in the pan, another skillet was needed for the pork. Not a big deal, but worth noting in case you plan on serving this one to anyone with tree nut allergies.


Isn't it colorful?! The plum was very ripe, but resembles the recipe photo pretty well. The recipe called for cooking the pork chops for only 2-3 minutes on each side on high heat. I cooked it for 5-6 instead (to be safe) and the chops were cooked through and tender. It's a matter of knowing your stove and not walking away from the pan, as I'm apt to do. 


This recipe was a winner. All of the ingredients came together nicely- a little savory and sweet, and the farro added a nice texture to the dish that was a bit heftier than rice. The best part- It was vegetarian and anti-fruit husband approved!
